Ingredients
For 4 servings
- 200 grams textured vegetable protein
- 1 tablespoon olive oil
- 2 tablespoons taco seasoning
- 1 cup water
- 400 grams canned black beans
- 8 corn tortillas
- 2 tomato
- 1 red onion
- 0.5 bunch cilantro
- 1 lime
- salt — to taste
Instructions
- 1
Rehydrate the textured vegetable protein by combining it with water and taco seasoning in a bowl. Let it sit for 5 minutes to absorb the flavors.
- 2
Heat olive oil in a pan over medium heat. Add the rehydrated textured vegetable protein and cook for 5-7 minutes, stirring occasionally, until lightly browned.
- 3
While the soy mince cooks, rinse and drain the black beans. Add them to the pan and cook for an additional 2-3 minutes until heated through.
- 4
Dice the tomatoes and red onion, and chop the cilantro. Slice the lime into wedges.
- 5
Warm the corn tortillas in a dry skillet over medium heat for 30 seconds on each side or until pliable.
- 6
Assemble the tacos by spooning the soy mince and black bean mixture into each tortilla. Top with diced tomatoes, red onion, and cilantro.
- 7
Serve the tacos with lime wedges on the side and salt to taste.
