Ingredients

  • 4 cups edamame
  • 2 cups brown rice
  • 1 red bell pepper
  • 1 carrot
  • 1 cup frozen peas
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 2 green onion

Instructions

    Cook the brown rice according to package instructions.

    While the rice is cooking, bring a pot of water to boil and add the edamame. Boil for about 5 minutes, then drain and set aside.

    Chop the red bell pepper and carrot into small bite-sized pieces.

    In a large pan over medium heat, add sesame oil and sauté the red bell pepper, carrot, and peas until tender, about 5 minutes.
