Ingredients
For 4 servings
- 500 g tilapia fillet
- 12 corn tortilla
- 2 avocado
- 2 lime
- 1/2 red cabbage
- 1 carrot
- 1/4 cup cilantro
- 1/4 cup mayonnaise
- 1/4 cup Greek yogurt
- 1 cup panko breadcrumbs
- 2 egg
- 1/4 cup all-purpose flour
- 3 tbsp olive oil
- salt — to taste
- black pepper — to taste
- 1 tsp garlic powder
Instructions
- 1
Preheat oven to 200°C (400°F).
- 2
Slice tilapia fillets into strips. Season with salt, pepper, and garlic powder.
- 3
Place flour on a plate, beat eggs in a bowl, and place panko breadcrumbs on another plate.
- 4
Coat fish strips in flour, then dip in egg, and finally coat with breadcrumbs.
- 5
Heat olive oil in a pan over medium heat and fry fish strips until golden and crispy, about 3-4 minutes per side.
- 6
Transfer fried fish to a baking sheet and bake in the oven for 10 minutes to ensure they are cooked through.
- 7
While the fish is baking, prepare the avocado lime sauce. Scoop avocados into a bowl, add juice of 1 lime, mayonnaise, Greek yogurt, and chopped cilantro. Mix until smooth and season with salt and pepper.
- 8
Shred red cabbage and carrot, and toss together to make a slaw. Squeeze the juice of the remaining lime over the slaw and sprinkle with a pinch of salt.
- 9
Warm corn tortillas in a dry pan over medium heat for about a minute on each side.
- 10
Assemble tacos by placing a few fish strips on a tortilla, adding a spoonful of slaw, and drizzling with avocado lime sauce. Serve immediately.
