Ingredients
For 4 servings
- 800 g chicken thigh
- 2 tbsp olive oil
- 1 onion
- 2 clove garlic
- 200 g baby spinach
- 400 g canned white beans
- 150 g low-fat cream cheese
- 250 ml chicken broth
- 50 g grated parmesan cheese
- 1 tsp dried thyme
- black pepper — to taste
- salt — to taste
Instructions
- 1
Preheat the oven to 200°C (390°F).
- 2
Dice the chicken thighs into bite-sized pieces and season with salt and black pepper.
- 3
Heat olive oil in a large oven-safe skillet over medium heat. Add the diced chicken and cook until browned on all sides, about 5-7 minutes. Remove chicken and set aside.
- 4
In the same skillet, add diced onion and minced garlic. Sauté until the onion is translucent, about 2-3 minutes.
- 5
Stir in baby spinach, and cook until wilted.
- 6
Add the canned white beans (drained and rinsed), low-fat cream cheese, chicken broth, and dried thyme to the skillet. Stir until the mixture is smooth and well combined.
- 7
Return the cooked chicken to the skillet, mixing to combine all ingredients.
- 8
Sprinkle grated parmesan cheese evenly over the top.
- 9
Transfer the skillet to the preheated oven, and bake for 10 minutes until the cheese is melted and the gratin is bubbly.
- 10
Remove from the oven and let rest for a few minutes before serving.
