Ingredients

  • 800 g chicken thigh
  • 2 tbsp olive oil
  • 1 onion
  • 2 clove garlic
  • 200 g baby spinach
  • 400 g canned white beans
  • 150 g low-fat cream cheese
  • 250 ml chicken broth
  • 50 g grated parmesan cheese
  • 1 tsp dried thyme
  • black pepper — to taste
  • salt — to taste

Instructions

    Preheat the oven to 200°C (390°F).

    Dice the chicken thighs into bite-sized pieces and season with salt and black pepper.

    Heat olive oil in a large oven-safe skillet over medium heat. Add the diced chicken and cook until browned on all sides, about 5-7 minutes. Remove chicken and set aside.

    In the same skillet, add diced onion and minced garlic. Sauté until the onion is translucent, about 2-3 minutes.
