- 2 tablespoons olive oil
- 1 lemon
- 2 tablespoons fresh parsley
- 2 cloves garlic
- 1 cup couscous
- 1 cup water
- 1 teaspoon salt
- 0.5 teaspoon black pepper
- 1 cup cherry tomatoes
- 2 cups spinach

Preheat the oven to 400°F (200°C).

Zest and juice the lemon, and mince the garlic cloves.
