Ingredients

For 4 servings

  • 2 chicken thigh
  • 3 tablespoon soy sauce
  • 2 tablespoon vegetable oil
  • 1 cup frozen mixed vegetables
  • 2 clove garlic
  • 2 egg
  • 4 cup cooked rice
  • 2 green onion
  • salt — to taste
  • black pepper — to taste

Instructions

  1. 1

Cut the chicken thighs into small bite-sized pieces and marinate them in 1 tablespoon of soy sauce for 5 minutes.

  2. 2

Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat.

  3. 3

Add chicken and cook for 5-6 minutes until fully cooked, stirring occasionally. Ensure internal temperature reaches at least 165°F.

  4. 4

Remove the chicken from the skillet and set aside.

  5. 5

In the same skillet, add the remaining 1 tablespoon of oil, then add minced garlic and frozen mixed vegetables. Cook for 3 minutes until the vegetables are heated through.

  6. 6

Push the vegetables to one side of the skillet and crack the eggs into the empty side. Scramble them gently until fully cooked, then mix them with the vegetables.

  7. 7

Add the cooked rice and chicken back into the skillet. Pour in the remaining 2 tablespoons of soy sauce and mix everything well to combine.

  8. 8

Add chopped green onions, salt, and black pepper to taste. Stir-fry for another 2 minutes until everything is heated evenly.

  9. 9

Serve hot, garnished with additional green onions if desired.
