Ingredients

- 2 chicken thigh
- 3 tablespoon soy sauce
- 2 tablespoon vegetable oil
- 1 cup frozen mixed vegetables
- 2 clove garlic
- 2 egg
- 4 cup cooked rice
- 2 green onion
- salt — to taste
- black pepper — to taste

Cut the chicken thighs into small bite-sized pieces and marinate them in 1 tablespoon of soy sauce for 5 minutes.

Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat.

Add chicken and cook for 5-6 minutes until fully cooked, stirring occasionally. Ensure internal temperature reaches at least 165°F.

Remove the chicken from the skillet and set aside.

In the same skillet, add the remaining 1 tablespoon of oil, then add minced garlic and frozen mixed vegetables. Cook for 3 minutes until the vegetables are heated through.

Push the vegetables to one side of the skillet and crack the eggs into the empty side. Scramble them gently until fully cooked, then mix them with the vegetables.
