Ingredients

- 400 g seitan
- 1 tbsp olive oil
- 1 onion
- 2 carrot
- 2 celery stalk
- 2 clove garlic
- 400 g canned diced tomatoes
- 1 liter vegetable broth
- 200 g frozen peas
- salt — to taste
- black pepper — to taste
- 1 tsp dried thyme
- 1 tsp dried oregano
- 100 g spinach
Instructions

Dice the onion, carrots, and celery. Mince the garlic.

Heat olive oil in a large pot over medium heat. Add the onion, carrots, and celery, and sauté until the onion is translucent.

Add the minced garlic and cook for another minute.

Stir in the diced tomatoes, vegetable broth, dried thyme, dried oregano, salt, and black pepper. Bring to a boil.
