  • 4 potato
  • 2 tablespoon olive oil
  • 2 clove garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • salt — to taste
  • black pepper — to taste
  • 1 lemon

    Preheat the oven to 425°F (220°C).

    Wash and chop potatoes into 1-inch chunks, leaving the skin on for extra fiber.

    Peel and mince the garlic cloves.

    In a large bowl, combine potato chunks, 1 tablespoon olive oil, minced garlic, dried oregano, dried basil, salt, and black pepper. Mix well to coat evenly.

    Spread the potatoes on a baking sheet in a single layer and roast in the oven for 10 minutes.

    Meanwhile, season the salmon fillets with salt and black pepper.
