Ingredients

  • 2 cups edamame
  • 1 cup quinoa
  • 2 cups water
  • 1 red bell pepper
  • 1 avocado
  • 1 lime
  • 0.25 cup cilantro
  • 2 tablespoons olive oil
  • salt — to taste
  • black pepper — to taste

Instructions

    Rinse quinoa under cold water. In a saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed. Remove from heat and let it sit, covered, for 5 minutes, then fluff with a fork.

    While quinoa is cooking, heat a pot of water to boiling. Add edamame and cook for 3-5 minutes until tender. Drain and set aside to cool slightly.
