Ingredients

  • 4 bell pepper
  • 1 cup quinoa
  • 2 cups water
  • 1 can (15 oz) black beans
  • 2 tablespoons olive oil
  • 1 onion
  • 2 cloves garlic
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 0.5 teaspoon pepper
  • 1 cup cheddar cheese
  • 2 tablespoons tomato paste
  • 0.5 cup cilantro

Instructions

    Preheat the oven to 375°F (190°C).

    Rinse quinoa under cold water, then cook with 2 cups of water according to package instructions.

    Halve the bell peppers lengthwise, remove seeds and membranes.

    Dice the onion and mince the garlic.

    In a pan, heat olive oil over medium heat. Add onion and garlic, sauté until onion is translucent.

    Add cooked quinoa, black beans, tomato paste, cumin, chili powder, salt, and pepper to the pan. Mix well and cook for another 5 minutes.

    Place bell pepper halves in a baking dish. Fill each with the quinoa-bean mixture.
