Ingredients

For 4 servings

  • 400 g canned salmon
  • 400 g canned chickpeas
  • 2 egg
  • 1 lemon zest
  • 2 green onion
  • 1/4 cup parsley
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 tablespoon all-purpose flour
  • 2 tablespoon olive oil
  • 1 teaspoon garlic powder

Instructions

  1. 1

Drain and rinse the canned chickpeas and add them to a large bowl.

  2. 2

Flake the canned salmon into the bowl with the chickpeas, making sure to remove any large bones.

  3. 3

Add the eggs, lemon zest, finely chopped green onion, chopped parsley, salt, black pepper, and garlic powder to the bowl.

  4. 4

Mix the ingredients together, then add the flour and combine until the mixture holds together.

  5. 5

Heat olive oil in a non-stick frying pan over medium heat.

  6. 6

Scoop about 1/4 cup of the salmon mixture and form it into a patty.

  7. 7

Carefully place the patties into the pan, cooking in batches if necessary, and fry for 3-4 minutes on each side until golden brown and heated through.

  8. 8

Serve immediately with a side of salad or yogurt dip.
