Ingredients

For 4 servings

  • 400 gram firm tofu
  • 2 tablespoon lime juice
  • 3 tablespoon soy sauce
  • 200 milliliter coconut milk
  • 2 tablespoon brown sugar
  • 1 teaspoon ground turmeric
  • 2 clove garlic
  • 100 gram peanut butter
  • 120 milliliter water
  • 1 teaspoon ginger
  • 2 tablespoon vegetable oil
  • 1 teaspoon curry powder
  • salt — to taste
  • 2 tablespoon chopped peanuts
  • fresh cilantro — to taste

Instructions

  1. 1

Press the tofu for 15 minutes to remove excess water and cut into 1-inch cubes.

  2. 2

In a bowl, mix lime juice, 2 tablespoons of soy sauce, 100ml coconut milk, brown sugar, ground turmeric, and one clove of minced garlic.

  3. 3

Add tofu cubes to the marinade, stirring to coat evenly. Let it marinate for 15–20 minutes.

  4. 4

Preheat the grill pan over medium heat and lightly oil it.

  5. 5

Thread tofu cubes onto skewers and grill for about 5–7 minutes on each side until golden brown.

  6. 6

For the peanut sauce, combine peanut butter, remaining 100ml coconut milk, water, remaining soy sauce, minced ginger, remaining minced garlic, curry powder, and salt in a small saucepan.

  7. 7

Simmer over low heat, stirring until smooth and creamy, for approximately 5 minutes.

  8. 8

Serve tofu skewers with peanut sauce, garnished with chopped peanuts and fresh cilantro.
