  • 8 chicken thigh
  • 3 tablespoon honey
  • 2 tablespoon olive oil
  • 1 teaspoon thyme
  • 2 clove garlic
  • 4 apple
  • 2 tablespoon lemon juice
  • 2 tablespoon butter
  • salt — to taste
  • black pepper — to taste

Instructions

  1. 1

    Preheat oven to 400°F (200°C).

  2. 2

Peel and core the apples, then cut them into quarters.

  3. 3

In a bowl, toss apple quarters with 1 tablespoon olive oil, lemon juice, salt, and black pepper.

  4. 4

Spread the apples on a baking sheet and roast in the oven for 20 minutes.

  5. 5

While apples are roasting, pat dry chicken thighs with paper towels and season with salt and black pepper.

  6. 6

In a large skillet over medium-high heat, add 1 tablespoon olive oil and 1 tablespoon butter.

  7. 7

Add chicken thighs to the skillet, skin side down, and sear for 5-7 minutes until golden brown. Flip and sear the other side for 5 minutes.

  8. 8

Meanwhile, in a small bowl, mix honey, minced garlic, and thyme.

  9. 9

Reduce heat to low, add the honey mixture to the skillet, and allow it to coat the chicken for 2-3 minutes, basting occasionally.

  10. 10

Remove the chicken thighs from the skillet and let rest for a few minutes.

  11. 11

Remove the apples from the oven and toss with the remaining 1 tablespoon of butter.

  12. 12

Serve honey-glazed chicken thighs with roasted apples on the side.
