  • 4 flour tortillas
  • 6 eggs
  • 1 bell pepper
  • 1 onion
  • 1 cup frozen spinach
  • 1 cup cheddar cheese
  • 2 tablespoon olive oil
  • salt — to taste
  • black pepper — to taste

Instructions

    Dice the bell pepper and onion finely.

    In a large skillet, heat 1 tablespoon of olive oil over medium heat.

    Add the diced bell pepper and onion to the skillet and sauté for 5 minutes until softened.

    Stir in the frozen spinach and cook for an additional 2 minutes until heated through.
