Ingredients

  • 2 tablespoons olive oil
  • 1 onion
  • 2 carrot
  • 2 celery stalk
  • 3 cloves garlic
  • 2 potato
  • 1 can canned tomatoes
  • 1 cup green lentils
  • 4 cups vegetable broth
  • 1 bay leaf
  • 1 teaspoon thyme
  • salt — to taste
  • black pepper — to taste
  • 2 cups spinach
  • 1 cup plain yogurt
  • 1 lemon

Instructions

    Dice the onion, carrot, and celery. Mince the garlic. Peel and cube the potatoes.

    In a large pot, heat olive oil over medium heat. Add the onion, carrot, and celery and sauté until soft, about 10 minutes.

    Add the garlic and cook for another minute until fragrant.

    Stir in the potatoes, canned tomatoes, green lentils, vegetable broth, bay leaf, and thyme. Bring to a boil.

    Reduce heat to a simmer and cover partially. Cook for 40 minutes, stirring occasionally, until lentils and potatoes are tender.
