For 4 servings

  • 2 15 oz can chickpeas
  • 12 oz whole grain pasta
  • 5 oz spinach
  • 2 tablespoons olive oil
  • 2 cloves garlic
  • 1 teaspoon crushed red pepper flakes
  • salt — to taste
  • black pepper — to taste
  • 1/2 cup parmesan cheese
  • 1 tablespoon lemon juice

Instructions

  1. 1

Drain and rinse the chickpeas thoroughly under cold water.

  2. 2

Cook the whole grain pasta according to package instructions until al dente, then drain and set aside.

  3. 3

  4. 4

Add minced garlic and red pepper flakes to the pan, and sauté until aromatic, about 1 minute.

Season with salt and black pepper to taste.

  8. 8
