Ingredients
For 4 servings
- 400 grams halloumi
- 2 tablespoons olive oil
- 1 red bell pepper
- 1 yellow bell pepper
- 1 onion
- 1 zucchini
- 2 cloves garlic
- 2 tablespoons soy sauce
- 1 tablespoon sriracha sauce
- 2 green onion
- black pepper — to taste
Instructions
- 1
Slice the halloumi into 1cm thick pieces. Pat dry with paper towels to remove excess moisture.
- 2
Heat 1 tablespoon of olive oil in a large non-stick skillet over medium heat.
- 3
Add the halloumi slices and cook for about 2-3 minutes on each side until golden brown. Remove from the pan and set aside.
- 4
In the same skillet, add the remaining 1 tablespoon of olive oil.
- 5
Chop the red and yellow bell peppers into thin strips, slice the onion, and cut the zucchini into half-moons.
- 6
Mince the garlic cloves.
- 7
Add the garlic, bell peppers, onion, and zucchini to the skillet. Stir-fry for 5-6 minutes until vegetables are tender-crisp.
- 8
In a small bowl, mix soy sauce with sriracha sauce.
- 9
Return the halloumi to the skillet and pour the sauce mixture over the stir-fry.
- 10
Cook for an additional 2-3 minutes, stirring occasionally, until everything is well combined and heated through.
- 11
Season with black pepper to taste.
- 12
Garnish with sliced green onions before serving.
