Ingredients

For 4 servings

  • 200 grams canned salmon
  • 100 grams baby spinach
  • 3 eggs
  • 50 grams whole wheat flour
  • 0.5 onion
  • 1 tablespoon olive oil
  • 1 teaspoon baking powder
  • black pepper — to taste
  • salt — to taste

Instructions

  1. 1

Preheat oven to 180°C (350°F) and lightly grease a muffin tin with olive oil.

  2. 2

Drain the canned salmon, remove any remaining bones and skin, and flake it into a bowl.

  3. 3

Finely chop the onion and sauté in a pan with olive oil until translucent, about 3 minutes.

  4. 4

Add the baby spinach to the pan and cook until wilted, about 2 minutes. Remove from heat.

  5. 5

In a mixing bowl, whisk together the eggs, then add the cooked spinach and onion mixture, salmon, whole wheat flour, and baking powder. Season with salt and black pepper to taste.

  6. 6

Spoon the mixture evenly into the prepared muffin tin slots.

  7. 7

Bake in the preheated oven for 12-15 minutes, or until the tops are firm and lightly golden.

  8. 8

Let cool slightly before removing from the tin and serving.
