Ingredients

- 1 cup red lentils
- 2 cups water
- 1 cup white rice
- 1 onion
- 1 carrot
- 1 cup cabbage
- 1 cup canned tomatoes
- 2 cloves garlic
- 2 tablespoons curry powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 2 cups water

Rinse the red lentils under cold water until the water runs clear.

In a pot, bring 2 cups of water to a boil and add the red lentils. Reduce heat to low, cover, and simmer for about 15 minutes until the lentils are tender.

While the lentils cook, rinse the rice under cold water and set it aside.

Chop the onion, carrot, and cabbage. Mince the garlic cloves.

In a large pan over medium heat, add olive oil. Sauté the onion, carrot, and garlic until softened, about 5 minutes.

Add the cabbage, canned tomatoes, curry powder, salt, and pepper to the pan. Stir and cook for another 5 minutes.
