  • 2 cans black beans
  • 2 cups frozen mixed vegetables
  • 1 onion
  • 2 cloves garlic
  • 2 tablespoons olive oil
  • 1 can canned diced tomatoes
  • 1 cup cheddar cheese
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon dried oregano
