Ingredients

  • 500 g ground turkey
  • 1 egg
  • 50 g breadcrumbs
  • 30 g parmesan cheese
  • 2 cloves garlic
  • 1 tsp onion powder
  • 1 tsp dried basil
  • 2 tbsp olive oil
  • 1 red bell pepper
  • 1 zucchini
  • 2 carrot
  • 200 g broccoli
  • 200 g brown rice
  • salt — to taste
  • black pepper — to taste

Instructions

    Preheat the oven to 200°C (400°F).

    In a bowl, mix ground turkey, egg, breadcrumbs, parmesan cheese, minced garlic, onion powder, dried basil, salt, and pepper until combined.

    Form the mixture into small meatballs and place on a lined baking sheet.

    Chop red bell pepper, zucchini, carrots, and broccoli into bite-sized pieces and place on another baking sheet.

    Drizzle the vegetables with olive oil, salt, and pepper. Toss to coat evenly.
