Ingredients

- 2 cans chickpeas
- 1 cup quinoa
- 2 cups water
- 2 tablespoons olive oil
- 1 red bell pepper
- 1 cucumber
- 1 cup cherry tomatoes
- 2 cups spinach
- 1 lemon
- 2 tablespoons tahini
- 1 clove garlic
- salt — to taste
- black pepper — to taste
