Ingredients

  • 4 salmon fillet
  • 2 broccoli
  • 2 sweet potato
  • 3 tablespoons olive oil
  • 1 lemon
  • 3 cloves garlic
  • salt — to taste
  • black pepper — to taste

Instructions

    Preheat oven to 425°F (220°C).

    Peel and cut the sweet potatoes into 1-inch cubes.

    Cut the broccoli into florets and peel and mince the garlic.

    On a large sheet pan, toss sweet potato cubes and broccoli florets with 2 tablespoons of olive oil, minced garlic, salt, and black pepper.

    Spread the vegetables evenly over the sheet pan and roast in the oven for 15 minutes.

    Meanwhile, season the salmon fillets with salt, black pepper, and a drizzle of the remaining olive oil.

    After 15 minutes, remove the sheet pan from the oven, make space for the salmon fillets, and place them on the pan.
