  • 1 cup brown lentils
  • 2 tablespoons olive oil
  • 1 onion
  • 2 cloves garlic
  • 1 bell pepper
  • 2 carrot
  • 1 zucchini
  • 2 tablespoons soy sauce
  • 1 teaspoon ground cumin
  • salt — to taste
  • black pepper — to taste
  • 1 cup plain yogurt
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh parsley

Instructions

  1. 1

Rinse and cook the brown lentils according to package instructions until tender, about 20 minutes.

  2. 2

While lentils are cooking, heat olive oil in a large pan over medium heat.

  3. 3

Chop the onion, garlic, bell pepper, carrot, and zucchini into bite-sized pieces.

  4. 4

Add the onion and garlic to the pan, sauté for 3 minutes until translucent.

Add the bell pepper, carrot, and zucchini to the pan, cook for another 5 minutes until vegetables are tender.

  6. 6

Stir in cooked lentils, soy sauce, ground cumin, salt, and black pepper. Cook for another 2 minutes to combine flavors.

  7. 7

In a small bowl, mix plain yogurt, lemon juice, and chopped fresh parsley to create the yogurt dressing.

  8. 8

Serve the vegetable and lentil stir-fry warm, with a generous drizzle of yogurt dressing on top.
