- 1 teaspoon turmeric powder
- 1 tablespoon fresh ginger
- 2 cloves garlic
- 1 medium carrot
- 1 medium onion
- 2 tablespoons olive oil
- 4 cups vegetable broth
- 1 lemon
- salt — to taste
- black pepper — to taste

- 1 teaspoon coriander powder
- 2 tablespoons fresh cilantro

Rinse the red lentils under cold water until the water runs clear and set aside.

Peel and grate the ginger. Mince the garlic. Dice the onion and carrot.

In a large pot, heat the olive oil over medium heat. Add the diced onion and carrot, sautéing until the onion is translucent, about 5 minutes.
