Ingredients

For 4 servings

  • 2 chicken breast
  • 12 corn tortillas
  • 1 cup cheddar cheese
  • 1 onion
  • 2 clove garlic
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • 1 teaspoon chili powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon pepper
  • 2 tablespoon olive oil
  • 1 lime
  • 0.25 cup cilantro

Instructions

  1. 1

Preheat the oven to 400°F (200°C).

  2. 2

Boil the chicken breasts in a pot of water until cooked through, about 15 minutes.

  3. 3

While the chicken cooks, finely chop the onion and mince the garlic.

  4. 4

Shred the cooked chicken using two forks and place it in a large bowl.

  5. 5

Add the chopped onion, minced garlic, cumin, oregano, chili powder, salt, pepper, and lime juice to the bowl with the chicken. Mix well.

  6. 6

Stir in the shredded cheddar cheese and chopped cilantro until evenly combined.

  7. 7

Warm the corn tortillas in the microwave for about 20 seconds to make them pliable.

  8. 8

Place about 2 tablespoons of the chicken mixture along the center of each tortilla, then roll them tightly.

  9. 9

Place the rolled taquitos seam-side down on a baking sheet lined with parchment paper.

  10. 10

Brush the rolled taquitos lightly with olive oil.

  11. 11

Bake in the preheated oven for 15-20 minutes, until crispy and golden brown.

  12. 12

Serve warm with salsa or guacamole on the side.
