Ingredients

  • 500 g ground pork
  • 2 cups jasmine rice
  • 4 cups water
  • 2 lime
  • 3 tablespoons fish sauce
  • 1 tablespoon granulated sugar
  • 1 shallot
  • 2 green onion
  • 1 bunch fresh cilantro
  • 1 bunch fresh mint
  • 1 red chili
  • 2 cloves garlic
  • 1 tablespoon vegetable oil
  • salt — to taste
  • black pepper — to taste

Instructions

    Rinse jasmine rice under cold water until the water runs clear. In a medium pot, combine rice and 4 cups of water. Bring to a boil, then reduce heat to low and cover. Cook for 15 minutes or until water is absorbed and rice is tender.

    While the rice is cooking, finely chop the shallot, green onion, cilantro, mint, and red chili. Mince the garlic.

    In a large skillet, heat vegetable oil over medium heat. Add minced garlic and ground pork. Cook until the pork is browned and cooked through, about 5-7 minutes. Season with salt and black pepper to taste.

    In a small bowl, mix the juice of the limes, fish sauce, and sugar until the sugar is dissolved.

    Once the pork is cooked, remove from heat and transfer to a large bowl. Add the chopped herbs, shallot, green onion, and red chili. Pour over the lime dressing and toss everything together to combine.
