- 2 sweet potato
- 2 can canned tuna
- 4 whole wheat tortilla
- 1 red onion
- 1 cucumber
- 1 red bell pepper
- 2 tablespoon olive oil
- 2 tablespoon lemon juice
- 1 clove garlic
- 2 tablespoon parsley
- salt — to taste
- black pepper — to taste

Preheat the oven to 400°F (200°C).

Peel and dice the sweet potatoes into small cubes. Place them on a baking sheet, drizzle with 1 tablespoon of olive oil, and season with salt and pepper. Roast for 20 minutes until tender.

While the sweet potatoes are roasting, finely chop the red onion, cucumber, and red bell pepper. Mince the garlic and chop the parsley.

In a large bowl, combine the drained tuna, chopped vegetables, minced garlic, and parsley. Add the lemon juice and the remaining olive oil, then mix well. Season with salt and pepper to taste.
