Ingredients

- 1 cup brown rice
- 14 oz extra-firm tofu
- 2 cups broccoli florets
- 1 carrot
- 1 bell pepper
- 3 tablespoons soy sauce
- 1 tablespoon olive oil
- 2 cloves garlic
- 1 tablespoon cornstarch
- 1 cup water
- 2 green onion

Cook the brown rice according to package instructions, and set aside.

Press the tofu to remove excess moisture, then cut into cubes.

Heat olive oil in a large pan over medium-high heat.

Add cubed tofu and cook until golden brown on all sides, about 5 minutes. Remove and set aside.

In the same pan, add minced garlic, sliced carrot, chopped bell pepper, and broccoli florets. Stir-fry for 5 minutes until vegetables are tender-crisp.

In a small bowl, whisk together soy sauce, water, and cornstarch until smooth.
