Ingredients

  • 1 cup quinoa
  • 2.5 cups water
  • 2 cups frozen mixed vegetables
  • 2 cups spinach
  • 1 tablespoon olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon cumin
  • 0.5 teaspoon garlic powder

    Rinse red lentils and quinoa under cold water.

    In a medium saucepan, combine 1 cup of rinsed red lentils with 2 cups of water. Bring to a boil, then reduce heat to low and simmer for 10-12 minutes until tender. Drain any excess water.

    In another saucepan, combine 1 cup of quinoa with 1.5 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until water is absorbed and quinoa is fluffy.
