Ingredients

  • 3 sweet potato
  • 4 cups kale
  • 1 onion
  • 3 cloves garlic
  • 2 carrot
  • 2 stalks celery
  • 6 cups vegetable broth
  • 1 can canned diced tomatoes
  • 2 tablespoons olive oil
  • salt — to taste
  • black pepper — to taste
  • 1 teaspoon paprika
  • 1 bay leaf

Instructions

    Peel and cube the sweet potatoes into 1-inch pieces.

    Chop the kale into bite-sized pieces, discarding the tough stems.

    Dice the onion and mince the garlic. Slice the carrots and celery.

    In a large pot, heat olive oil over medium heat. Add the onion, carrots, and celery, and sauté for 5 minutes until softened.
