Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 15 oz can canned chickpeas
  • 1 cucumber
  • 1 cup cherry tomatoes
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • salt — to taste
  • black pepper — to taste
  • 1/4 cup fresh parsley

Instructions

    Rinse the quinoa under cold water using a fine mesh sieve.

    In a medium saucepan, bring water to a boil. Add the quinoa, cover, and reduce to a simmer. Cook for 15 minutes until the quinoa is fluffy and water is absorbed.
