  • 2 red bell pepper
  • 1 red onion
  • 2 carrot
  • 2 15 oz can canned white beans
  • 3 tablespoon olive oil
  • 1 lemon
  • 4 clove garlic
  • salt — to taste
  • black pepper — to taste
  • 1 teaspoon dried oregano

    Preheat oven to 400°F (200°C).

    Rinse and drain the canned white beans.

    Cut the zucchini, red bell peppers, and carrots into bite-sized pieces. Slice the red onion into wedges.
