  • 500 g cauliflower florets
  • 2 tbsp olive oil
  • 1 red onion
  • 2 cloves garlic
  • 1 red bell pepper
  • 100 g spinach
  • 1 tbsp lemon juice
  • salt — to taste
  • black pepper — to taste

    Chop the cauliflower florets into rice-sized pieces or pulse them in a food processor until they resemble rice.

    Dice the red onion, finely mince the garlic, and chop the red bell pepper into small cubes.

    In a large skillet, heat the olive oil over medium-high heat.
