Ingredients

  • 2 cups red lentils
  • 4 cups water
  • 2 tablespoons olive oil
  • 2 tablespoons taco seasoning
  • 8 soft tortillas
  • 2 avocado
  • 2 tomato
  • 0.5 red onion
  • 2 tablespoons lime juice
  • 0.5 cups cilantro
  • salt — to taste
  • pepper — to taste

Instructions

    Rinse the red lentils thoroughly under cold water.

    In a medium saucepan, add the red lentils and water. Bring to a boil over medium-high heat, then reduce to a simmer and cook for 10-12 minutes until the lentils are tender and water is absorbed.

    While lentils are cooking, chop the avocado, tomato, and red onion into small pieces. Combine in a bowl with lime juice, chopped cilantro, salt, and pepper to make the salsa.
