Ingredients

For 4 servings

  • 400 g tempeh
  • 600 g potatoes
  • 400 g frozen mixed vegetables
  • 2 tbsp olive oil
  • 3 tbsp soy sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • salt — to taste
  • black pepper — to taste
  • 2 tbsp parsley

Instructions

    Cut the tempeh into small cubes and set aside.

    Peel and dice the potatoes, then place them in a pot of water. Bring to a boil and cook until tender, about 10 minutes.

    While potatoes cook, heat 1 tbsp olive oil in a pan over medium heat. Add tempeh cubes and sauté for 5 minutes until golden brown.

    Add soy sauce, garlic powder, onion powder, and a pinch of black pepper to the tempeh. Stir well and cook for another 2 minutes. Remove from heat.

    In another pot, cook the frozen mixed vegetables according to package instructions, then drain any excess water.

    Drain the potatoes and mash them with 1 tbsp olive oil, salt, and black pepper until smooth.
