Ingredients

For 4 servings

  • 2 can (5 oz each) canned tuna
  • 1 can (15 oz) black beans
  • 8 corn tortillas
  • 2 avocado
  • 1 lime
  • 1 red onion
  • 0.5 bunch cilantro
  • 2 tablespoon olive oil
  • 1 garlic clove
  • 1 teaspoon cumin
  • salt — to taste
  • black pepper — to taste

Instructions

  1. 1

Drain and rinse the black beans. Set aside.

  2. 2

In a bowl, combine drained tuna, black beans, olive oil, minced garlic, cumin, salt, and pepper. Mix well.

  3. 3

Heat a non-stick pan over medium heat. Warm the corn tortillas for about 1 minute on each side until pliable. Remove and keep warm.

  4. 4

Peel and dice the avocado. Finely chop the red onion and cilantro. Juice the lime.

  5. 5

In a separate bowl, mix diced avocado, red onion, cilantro, lime juice, salt, and pepper to make the salsa.

  6. 6

Assemble the tacos by dividing the tuna and black bean mixture evenly among the 8 tortillas.

  7. 7

Top each taco with a generous spoonful of avocado salsa.

  8. 8

Serve immediately, allowing diners to add extra lime juice or cilantro to taste.
