Ingredients

  • 600 g salmon fillet
  • 1 cup brown rice
  • 2 cups broccoli florets
  • 2 carrot
  • 1 red bell pepper
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 lemon
  • 2 cloves garlic
  • 2 green onion
  • salt — to taste
  • black pepper — to taste

Instructions

    Preheat the oven to 200°C (400°F).

    Cook the brown rice according to package instructions.

    While the rice is cooking, cut the salmon fillet into four equal pieces. Season with salt, black pepper, and a tablespoon of soy sauce.

    Place the salmon on a baking sheet lined with parchment paper and bake in the oven for 12-15 minutes until cooked through.

    Meanwhile, chop the broccoli into bite-sized pieces, slice the carrots into thin strips, and slice the red bell pepper into strips.
