- 600 g salmon fillet
- 1 cup brown rice
- 2 cups broccoli florets
- 2 carrot
- 1 red bell pepper
- 2 tablespoons olive oil
- 2 tablespoons soy sauce
- 1 lemon
- 2 cloves garlic
- 2 green onion
- salt — to taste
- black pepper — to taste
Instructions
- 1
Preheat the oven to 200°C (400°F).
- 2
Cook the brown rice according to package instructions.
- 3
While the rice is cooking, cut the salmon fillet into four equal pieces. Season with salt, black pepper, and a tablespoon of soy sauce.
- 4
Place the salmon on a baking sheet lined with parchment paper and bake in the oven for 12-15 minutes until cooked through.
- 5
Meanwhile, chop the broccoli into bite-sized pieces, slice the carrots into thin strips, and slice the red bell pepper into strips.
- 6
In a pan, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute.
- 7
Add broccoli, carrot, and red bell pepper to the pan and stir-fry for 5-7 minutes until tender-crisp.
- 8
Prepare a dressing by squeezing the juice of the lemon and mixing it with the remaining soy sauce.
- 9
Divide the cooked brown rice into four bowls. Top each with a piece of salmon and the stir-fried vegetables.
- 10
Drizzle the citrus dressing over each bowl and garnish with chopped green onion.
