Ingredients

  • 1 cup brown rice
  • 0.5 cup dried black beans
  • 4 egg
  • 1 cup frozen mixed vegetables
  • 1 tablespoon vegetable oil
  • 2 cloves garlic
  • 1 onion
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • salt — to taste
  • black pepper — to taste

Instructions

    Rinse the beans thoroughly, then soak them in water for at least 4 hours or overnight.

    Drain and rinse the beans, then add them to a pot with fresh water. Boil for 30-40 minutes until tender. Drain and set aside.

    Cook the brown rice according to package instructions, set aside.

    In a large skillet, heat vegetable oil over medium heat. Dice the onion and mince the garlic, then add them to the skillet. Sauté for 3-4 minutes until softened.
