Ingredients

For 4 servings

  • 500 g ground turkey
  • 400 g frozen mixed vegetables
  • 1 onion
  • 2 clove garlic
  • 2 tbsp olive oil
  • 250 ml vegetable broth
  • salt — to taste
  • black pepper — to taste
  • 100 g dry breadcrumbs
  • 100 g cheddar cheese

Instructions

  1. 1

Preheat the oven to 200°C (390°F).

  2. 2

Chop the onion and mince the garlic.

  3. 3

In a large skillet, heat the olive oil over medium-high heat. Add the onion and garlic, cooking until the onion is translucent.

  4. 4

Add the ground turkey to the skillet, breaking it up with a spoon, and cook until browned, about 5 minutes. Season with salt and black pepper.

  5. 5

Stir in the frozen mixed vegetables and vegetable broth. Bring the mixture to a simmer for 3-5 minutes until the vegetables are heated through.

  6. 6

Transfer the mixture to a baking dish. Spread the dry breadcrumbs evenly over the top of the mixture.

  7. 7

Grate cheddar cheese over the breadcrumbs.

  8. 8

Bake in the preheated oven for 10 minutes, until the cheese is melted and the breadcrumbs are golden brown.

  9. 9

Serve hot from the oven and enjoy.
