  • 1 onion
  • 2 cloves garlic
  • 400 grams button mushrooms
  • 1.5 cups arborio rice
  • 4 cups vegetable broth
  • 0.5 cups parmesan cheese
  • 2 tablespoons butter
  • salt — to taste
  • black pepper — to taste
  • 2 tablespoons parsley

Instructions

    Finely chop the onion and mince the garlic.

    Clean and slice the button mushrooms.

    In a large skillet, heat the olive oil over medium heat.

    Add the onion and garlic, sauté until onion is translucent.

    Add the mushrooms and cook until they are browned and softened.

    Stir in the arborio rice and cook for 1-2 minutes until the rice is slightly toasted.

    Begin adding the vegetable broth, one cup at a time, stirring constantly and allowing the liquid to fully absorb before adding more.
