Ingredients

For 4 servings

  • 2 cups brown rice
  • 2 cups frozen edamame
  • 1 red bell pepper
  • 1 carrot
  • 1 cucumber
  • 2 green onions
  • 3 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 2 tablespoons rice vinegar
  • 2 tablespoons sesame seeds
  • 1 clove garlic
  • ground black pepper — to taste

Instructions

  1. 1

Cook the brown rice according to package instructions, typically about 15 minutes, then set aside.

  2. 2

While the rice cooks, bring a pot of water to boil and add the frozen edamame, cooking for about 5 minutes until tender. Drain and set aside.

  3. 3

Slice the red bell pepper, carrot, and cucumber into thin strips. Chop the green onions finely.

  4. 4

In a small bowl, mix together soy sauce, sesame oil, rice vinegar, minced garlic, and black pepper to make the dressing.

  5. 5

In a large bowl, combine the cooked brown rice, edamame, sliced vegetables, and green onions. Drizzle with the sesame dressing and toss to coat evenly.

  6. 6

Sprinkle sesame seeds over the top before serving.
