- 2 carrot
- 2 potato
- 1 cup frozen peas
- 1 onion
- 2 clove garlic
- 14.5 ounce canned diced tomatoes
- 1 tablespoon vegetable oil
- 1 vegetable stock cube
- 4 cup water
- salt — to taste
- black pepper — to taste
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley

Rinse red lentils under cold water until the water runs clear to remove excess starch.

Peel and dice the carrot and potato into small bite-sized pieces. Finely chop the onion and mince the garlic cloves.
