Ingredients

  • 1 cup red lentils
  • 1 cup white rice
  • 1 can canned diced tomatoes
  • 1 onion
  • 2 cloves garlic
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 0.5 teaspoon turmeric
  • salt — to taste
  • black pepper — to taste
  • 3 cups water
  • 1 cup frozen peas

Instructions

    Rinse the red lentils and rice under cold water in a sieve until the water runs clear, then drain thoroughly.

    Chop the onion and mince the garlic.

    In a large skillet, heat the olive oil over medium heat. Add the onion and garlic, sauté until the onion is translucent, about 3 minutes.

    Stir in the cumin, coriander, and turmeric, and cook for 1 minute until fragrant.
