Ingredients

- 500 g shrimp
- 4 sweet potatoes
- 2 tbsp olive oil
- 4 cloves garlic
- 1 red bell pepper
- 4 stalks green onion
- 1 tsp chili flakes
- 2 tbsp lemon juice
- salt — to taste
- black pepper — to taste

Peel and cube the sweet potatoes. Place them in a pot of salted boiling water and cook for 15-20 minutes until tender.

While the sweet potatoes cook, heat 1 tbsp of olive oil in a large pan over medium heat. Add minced garlic and cook for 1 minute until fragrant.

Add shrimp to the pan, season with salt, black pepper, and chili flakes, and sauté for 4-5 minutes until the shrimp are pink and cooked through. Remove shrimp from the pan and set aside.

In the same pan, add the remaining olive oil and sliced red bell pepper. Sauté for 5 minutes until soft.

Drain the cooked sweet potatoes and mash them with lemon juice, salt, and black pepper to taste.
