Ingredients

For 4 servings

  • 1 zucchini
  • 2 eggs
  • 1 cup all-purpose flour
  • 1 cup cheddar cheese
  • 0.5 teaspoon salt
  • 1 teaspoon baking powder
  • 2 tablespoon olive oil
  • black pepper — to taste

Instructions

  1. 1

    Preheat oven to 375°F (190°C).

  2. 2

Grate the zucchini and squeeze out excess moisture using a clean kitchen towel.

  3. 3

In a large bowl, beat the eggs until smooth, then stir in the grated zucchini, olive oil, salt, and black pepper.

  4. 4

Add the cheddar cheese and mix well.

  5. 5

In another bowl, combine flour and baking powder. Gradually add to the zucchini mixture, stirring until just combined.

  6. 6

Lightly grease a mini muffin tin with cooking spray or olive oil.

  7. 7

Spoon the mixture into the muffin tin, filling each about 3/4 full.

  8. 8

Bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean.

  9. 9

Allow to cool slightly before removing from the tin. Serve warm or at room temperature.
