Ingredients

For 4 servings

  • 300 g penne pasta
  • 2 tbsp olive oil
  • 3 cloves garlic
  • 250 g button mushrooms
  • 150 g fresh spinach
  • 200 ml heavy cream
  • 50 g parmesan cheese
  • salt — to taste
  • black pepper — to taste
  • 1/4 tsp nutmeg

Instructions

  1. 1

Bring a large pot of salted water to a boil and cook the penne pasta according to package instructions until al dente. Drain and set aside.

  2. 2

While the pasta is cooking, heat olive oil in a large skillet over medium heat.

  3. 3

Mince the garlic cloves and add them to the skillet, sautéing for about 1 minute until fragrant.

  4. 4

Slice the button mushrooms and add them to the skillet, cooking for 5-7 minutes until they are browned and tender.

  5. 5

Add the fresh spinach to the skillet and cook for 2-3 minutes until wilted.

  6. 6

Pour in the heavy cream and stir well, allowing it to simmer for 3-4 minutes until slightly thickened.

  7. 7

Grate the parmesan cheese and add it to the skillet, stirring until melted and the sauce is smooth.

  8. 8

Season the sauce with salt, black pepper, and nutmeg to taste.

  9. 9

Combine the cooked pasta with the sauce, tossing to coat evenly.

  10. 10

Serve the creamy spinach and mushroom pasta immediately, garnished with additional parmesan cheese if desired.
