Ingredients

For 4 servings

  • 2 chicken breast
  • 2 cups white rice
  • 2 cups frozen mixed vegetables
  • 2 egg
  • 4 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 3 green onion
  • 2 cloves garlic
  • salt — to taste
  • black pepper — to taste

Instructions

    Cook the rice according to package instructions and set aside.

    While the rice is cooking, dice the chicken breasts into small pieces.

    Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the diced chicken, season with salt and pepper, and cook until no longer pink, about 5-6 minutes.

    Minced the garlic and chop the green onions. Set aside.

    Once the chicken is cooked, remove from the skillet and set aside. In the same skillet, add another tablespoon of olive oil.
