Ingredients

- 2 can canned tuna
- 1 cup quinoa
- 2 cup water
- 1 cucumber
- 1 cup cherry tomatoes
- 1 red onion
- 1 lemon
- 2 tablespoon olive oil
- salt — to taste
- black pepper — to taste
- 4 cup baby spinach

Rinse the quinoa under cold water using a fine mesh strainer.

In a medium saucepan, combine quinoa and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed.
