Ingredients

- 2 pounds beef chuck roast
- 12 corn tortillas
- 2 cups cheddar cheese
- 4 dried guajillo chiles
- 2 dried ancho chiles
- 1 dried chipotle chiles
- 1 onion
- 4 clove garlic
- 2 tablespoon tomato paste
- 1 teaspoon cumin
- 1 teaspoon dried oregano
- 2 bay leaves
- 4 cups beef broth
- 2 tablespoon vegetable oil
- 1 lime
- 0.5 cup fresh cilantro
- salt — to taste
- black pepper — to taste

Remove stems and seeds from guajillo, ancho, and chipotle chiles; toast them in a dry skillet over medium heat until aromatic, about 2-3 minutes.

Boil 2 cups of water and pour over toasted chiles, let them soak for 15 minutes.

Cut beef into large chunks and season with salt and black pepper.

In a large pot, heat vegetable oil over medium-high heat. Sear beef chunks on all sides until browned, then remove.

Add chopped onion and minced garlic to the pot, sauté until softened.

Blend soaked chiles with soaking water until smooth. Strain into the pot with onions and spices.
